    Some people call Mascarpone buttercream, Mascarpone frosting, and the thing is that they are actually the same thing. A creamy and light buttercream frosting with natural vanilla flavor for your cakes or cupcakes.

    Mascarpone Frosting made with mascarpone, heavy cream, confectioners' sugar, and almond and vanilla extracts is a lusciously smooth creamy frosting. It is stable and holds its shape at room temperature and remains soft when refrigerated.     Mascarpone is an Italian cream cheese. This is definitely not to be mistaken for American cream cheese. They are quite different.

    Mascarpone cheese is made from cow's milk. It is off-white in color and is spreadable. If you've ever enjoyed tiramisu, it was most likely made with it. People also use it in my cannoli filling.

    Some people love spreading it on raisin toast. It melts like a cross between whipped cream and butter but isn't exactly like either. Mascarpone can be used in a wide variety of ways including desserts like cheesecake or adding richness to a risotto.

    Mascarpone Buttercream Recipe

    Equipments & Kitchen Utensils Used: Bowls (large & small), teaspoons, freezer, measuring cups, handheld or electric mixer, cake plate, or serving board.

    Ingredients

    • 2½ cups of powdered sugar
    • 1 cup of unsalted butter at room temperature
    • ¾ cup of mascarpone cheese at room temperature
    • 1 teaspoon of Madagascar vanilla paste

    Instructions

    • Place powdered sugar and butter in an electric mixer fitted with a paddle attachment.
    • Start mixing at the lowest speed. Increase speed to medium and beat until fluffy, scraping down the sides occasionally, about 3 minutes.
    • Add mascarpone cheese and vanilla paste; mix on medium-low until creamy. Do not overmix frosting at this point, or the butter and mascarpone could separate.

     

    Mascarpone Buttercream Recipe Variations

    • Lemon Mascarpone Buttercream: To create a lemon buttercream, combine 1 lemon zest and 2 tablespoons of lemon curd.2https://www.kitchenaid.co.uk/cookprocessor/recipes/mascarpone-buttercream
    • Raspberry Mascarpone Buttercream: Add a few tablespoons of raspberry jam to create a raspberry buttercream.

     

    Recipe Notes for Mascarpone Buttercream

    • Do not overmix frosting at this point, or the butter and mascarpone could separate.
    • If you want your buttercream less sweet, add one tablespoon of milk as well as a teaspoon of salt.
    • Makes about 3 cups.
    • For longer-term storage, keep it in an airtight container in the refrigerator or freezer. Frosting will remain soft even after refrigerating, but you can always allow it to come to room temperature before using it if previously refrigerated or frozen.
    • Your grocery store might have 8.8oz containers of mascarpone or lesser – So you can use the entire container; the recipe will work just fine.
    • This frosting has a lower melting point and can soften quickly. Keep cakes cool; you may need to pop the frosting into the fridge for 15min to make it easier to work with, as the frosting of your cake.
    • Will generously frost two 9" cakes for 24 cupcakes.

    You see, this frosting is light and fluffy, and smooth. It's everything you want a frosting to be. This frosting can be shaped and spread however you like and will, too, hold its shape.

    It doesn’t harden or change shape when refrigerated. Mascarpone buttercream would go perfectly with any cake or cupcake. Many can't wait to top some heavenly homemade chocolate cupcakes with it!

    This buttercream is very, very creamy and you can use it to pipe with basic tip shapes (you can add a little more powdered sugar to stiffen it up if you have to).

    I don't think it would be the best fit for piping flowers or anything fancy, but it makes a pretty, simple presentation for cupcakes and cakes...or even, just on a spoon.
