    How to get it to prepare

    • 2 tablespoons of powdered edible potash (food tenderizer)
    • 2 habanero peppers (chopped)
    • 2 tablespoons of ground crayfish
    • 1 tablespoon of ground utazi leaves
    • 1 tablespoon of ground uziza leaves
    • 1 tablespoon of powdered onion
    • 2 cubes of seasoning
    • Salt to taste
    • 2 cups of palm oil
    • Water

    Here are the steps to prepare Isi Ewu:

    1. Clean and cut the goat head into pieces. You can ask your butcher to do this for you.
    2. In a pot, add the goat headpieces and pour enough water to cover them. Add the powdered onion and seasoning cubes, and bring them to a boil. Reduce the heat and let it simmer for about an hour or until the meat is tender.
    3. Remove the pot from the heat and set aside.
    4. In another pot, heat up the palm oil until it’s hot. Add the powdered potash to the oil and stir continuously for about 10 minutes until the oil turns yellow.
    5. Add the chopped habanero peppers, ground crayfish, and salt to taste. Stir well.
    6. Add the cooked goat headpieces to the pot and stir well until the pieces are well coated with the palm oil mixture.
    7. Add water to the pot until the goat headpieces are just covered. Cover the pot and let it simmer for another 20-30 minutes or until the oil floats to the top.
    8. Add the ground utazi and uziza leaves to the pot and stir well. Simmer for another 5 minutes.
    9. Your Isi Ewu is now ready! Serve with boiled yam or plantain.

    Isi Ewu is typically a spicy dish, but you can adjust the number of habanero peppers used according to your taste preference.
