Easter coconut cream eggs are an easy, no-bake, and a great Easter dessert idea! These candies taste so much better homemade and are fun to make for your kid’s Easter baskets! These Easter coconut cream eggs are made from just a few, simple pantry basics.

Ingredients

  • 1 package (8 ounces) of cream cheese, softened
  • 1 tablespoon of butter, softened
  • 4 cups of confectioners’ sugar
  • 1 cup of sweetened shredded coconut
  • 2 cups of semisweet chocolate chips
  • 1 tablespoon of shortening

Instructions

  • Line a half baking sheet with parchment paper, and set aside
  • In a medium bowl, using a hand mixer beat cream cheese and butter until blended
  • Add powdered sugar and coconut and stir well until incorporated
  • Refrigerate for about 1 hour or until easy to mold with hands
  • Dust your hands with powdered sugar and mold the coconut mixture into egg shapes
  • Place coconut egg on parchment paper, and do the same with the rest of the coconut mixture
  • Place in the freezer for 1 hour or until eggs are firm
  • Melt chocolate chips and shortening in the microwave by heating for 30 seconds then stirring and repeating the process until it is melted and smooth
  • Using a fork, dip the egg into the chocolate and flip it to cover it completely
  • Tap the fork on the edge of the bowl or place them on a rack to remove the extra chocolate
  • Place back on parchment paper
  • Refrigerate until the chocolate has set
  • Drizzle chocolate syrup onto each egg if you desired

Notes

  • Shortening: You can use butter or margarine instead of shortening in this chocolate Easter eggs recipe. For every 1 cup of shortening, use 1 cup and 2 tablespoons of butter or margarine.
  • Coconut extract: Use coconut oil as a substitute for coconut extract. It’ll give your coconut cream Easter eggs a yummy flavor and keep the consistency the same.
  • Candy: You can use candy or sprinkles to decorate your sweet treat. It’s Easter!
